Here’s a recipe for a tasty, super easy salad that a friend of mine shared with me:

  • 1 bag baby arugula
  • 1/2 a lemon
  • Olive oil
  • Shredded Parmesan cheese


Put arugula in bag. Squeeze lemon juice onto arugula, drizzle with a little olive oil (to taste), top with a little (about 1/4 cup or less) cheese. Toss and enjoy as a refreshing lunch or side at dinner. Top with grilled shrimp or chicken for some protein.
