Kale Salad at Whole Foods

If you haven’t tried Whole Foods Super Salad, you’ve got to go. They make kale taste so good. You can get it in the deli section. If you’re not sure you’ll like it, ask to try some. Whole Foods is really good about that.

I have found in trying to be healthier (which I’ll admit hasn’t gone that well the past week) that if I eat really good food that is well prepared and tastes good it is easier for me to stay on track with making healthful eating choices.

    Hi, I love kale too!
    I remember you looking for veggie w/o eggs breakfast ideas.
    Here is an easy, healthy, low-fat recipe for either sweet or savory zucchini pancakes:
    1 cup flour of your choice
    1 1/2 tsp baking powder
    1/4 tsp salt
    2 Tbsp sweetener of your choice (optional)
    3 cups zucchini, grated
    3 Tbsp flax seeds mixed with 9 Tbsp water- let sit for 2 min
    1.Mix dry ingredients together (flour, baking powder, salt and sweetener, if using any).
    2.Mix “wet ingredients” (zucchini and flax seed mix)
    3.Preheat griddle to medium heat (spray with olive oil or cooking spray first)
    4.Drop 1/4 cup servings onto griddle. Cook approximately 3-4 minutes before flipping -you will see browning around the edges.
    5.Cook another 2-3 minutes.

    If you make the savory pancakes, add some onion, garlic, pepper or chili pepper.
