It’s a new year, so I decided our challenge count is restarting from 1 again!
If you don’t already eat at least one vegetable a day, start today. If you already eat a vegetable a day, try eating an extra vegetable a day that isn’t one of your normal choices. Consider kale, brussels sprouts, beets, swiss chard.
If I didn’t think about it, the only vegetables I would eat are corn, broccoli, asparagus, peas, and carrots. They are my favorites. (I go for the sweet ones clearly.) So even I am planning on trying some additional veggies. Right now my fridge is stocked with brussels spouts, red kale, elephant kale, and cabbage. I like them all, but just don’t regularly buy them.
